Skillet Shrimp Scampi Dip is an easy to make dip that puts a new spin on Shrimp Scampi. This recipe is loaded with shrimp and has all the fresh tasting garlic and buttery goodness of traditional Shrimp Scampi, but is served as a dip with lots of ooey gooey cheese, making it perfect for holiday parties!
Scampi is Italian for prawns, and traditional Italian Scampi recipes are actually made with a shellfish similar to lobster called langoustines. Here in the states Shrimp Scampi is generally cooked with a garlic butter and wine sauce and served on a bed of pasta. It is an elegant dish with flavors that work so well together I just couldn't resist turning it into one of my easy skillet dips.
Most of the ingredients are staples in my kitchen. I love having shrimp in the freezer so I can whip up this dip in no time whenever I get a craving or friends stop by unexpectedly. It's good to be prepared!
When serving this dip, don't forget to have lots of chips on hand too. This dip pairs perfectly with Food Should Taste Good's Cantina Tortilla Chips made with stone ground yellow corn and a pinch of sea salt! The fresh tasting, authentic flavor of the Cantina chips makes them a favorite in our house. They are crispy with a sprinkling of sea salt and they pair well with all of our favorite dips!
This dip only takes about 10 minutes to prepare. I gather all my ingredients so they are within reach (see ingredient list below) and ready when I need them. Remove the tails from the shrimp and discard. Chop the shrimp into bite sized pieces and season with a pinch of salt and pepper as well as 1/4 teaspoon of red pepper flakes and set aside. Mince enough garlic to have 1/2 tablespoon and mix garlic with the seasoned shrimp.
Melt 2 tablespoons of butter in skillet over mid-high heat and add the seasoned shrimp with the garlic. Cook for about 1 minute on each side until shrimp are nicely pink.
Add 1/4 cup of white wine and stir to combine all of the little bits with the shrimp. Scrape up any stuck on bits in the bottom of the pan. Reduce heat to medium and add an 8 ounce block of cream cheese. Cook, stirring, until melted.
Add 1/4 cup of Parmesan cheese and 1/2 tablespoon of freshly chopped parsley and stir to melt and combine. Give it a taste and adjust the seasonings to your liking. Top with 1 cup of mozzarella cheese...
and place the skillet on the middle oven rack under the broiler until the cheese begins to brown. Remember to leave the oven door ajar when broiling and watch it closely. It will only take about a minute for the cheese to brown. Time will vary depending on your oven.
When the cheese is melted and browned to your liking, remove it from the oven and garnish with freshly chopped parsley and some whole cooked shrimp if you like. Serve with Food Should Taste Good's Cantina Tortilla Chips and enjoy!

Ingredients
- 4 ounces shrimp, peeled, deveined, and thawed
- pinch of salt and pepper
- 1/4 teaspoon red pepper flakes
- 1/2 tablespoon freshly minced garlic
- 2 tablespoons unsalted butter
- 1/4 cup white wine (can sub in chicken broth if you prefer)
- 8 ounces cream cheese
- 1/4 cup Parmesan cheese
- 1/2 tablespoon freshly chopped parsley
- 1 cup mozzarella cheese
- freshly chopped parsley for garnish
- whole cooked shrimp for garnish (optional)

Are you using very small shrimp or did you cut them into smaller pieces? Looks delicious!
