And because my mama taught me how to share, I'm passing what I learned on to you, so we can all roast our way to a tasty holiday!

Having this app in the palm of your hand is like having a chef in the kitchen with you when you are planning for and executing your holiday roast. On the app you will find information on the different types of roasts you can choose, from the more expensive cuts such as the Ribeye Roast or the Beef Tenderloin to more economical cuts like the Eye of Round or Tri-Tip Roast.
Once you decide on which cut to roast, the app will guide you through the purchasing process. Now that you have the perfect cut of beautifully marbled Certified Angus Beef®, how do you go about roasting it to perfection?
Never fear! The Roast Perfect App has you covered! There's even a video that walks you through the basic roasting technique! The app not only shows you how to choose the perfect cut, but it shows you how to prep it for roasting too!
No matter what type of roast you are making, you will want to season it well with salt and pepper or your choice of rub,
and also get a good sear on the outside. Searing can be achieved on a grill, in a screaming hot cast-iron skillet, or by blasting it with high heat in the oven. I don't care which option you choose to sear your roast. Each will yield good results. But whatever you do, DON'T SKIP THIS STEP! Searing is essential to roasting your way to a tasty holiday! Refer to the app for searing times and temperatures.
Once you have a good sear on the roast, it is finished in the oven. A roast is always cooked on a rack to allow even heat distribution all the way around and to keep the roast out of any pan juices that might accumulate. For a large, holiday type roast, you will want to invest in a roasting set such as this one (click here). When making a smaller roast that fits in a skillet, you can use a small meat rack (click here) and a cast-iron skillet (click here)like I've done in this picture...
Because oven temps can and do vary wildly, the App recommends having an instant read thermometer handy to check for doneness. Refer to the App for degree of donessness temperatures where you'll find photos from rare to well-done and the finished temps for each. Always remove your roast 5-10 degrees BELOW the finished temperature as the roast will continue to cook after removing it from the oven.
How do you Carve a Roast for best results?
There is a specific way to carve the roast for overall best results. Allowing the roast to rest and then carving against the grain of the beef is essential. Resting ensures juiciness and carving against the grain shortens the fibers making it even more tender.
