The end of summer means the beginning of the busy season! From homework to practices, & club activities, time just seems to slip away and before you know it, it's time for dinner magic to happen. Over the years I have come up with some tricks for putting quality, effortless meals on the table that everyone loves. At the top of my go-to list is Barbecued Chicken on Garlic Toast. A family fave that is on the table in 15 minutes and won't break the bank either!!
Crisp buttered garlic toast topped with tangy barbecued pulled chicken is a big sandwich so thick you have to open your mouth extra wide to get that first scrumptious bite! No one will ever guess it's a budget-friendly meal that is super easy to prepare and on the table in no time!
Use leftover chicken or a prepared rotisserie chicken. Shred the chicken...
Heat a large skillet over medium heat and add chicken with an 18 ounce bottle of your favorite barbecue sauce. I use Sweet Baby Ray's Sweet and Spicy. Cook over medium heat until heated through. It should only take about 5 minutes and will be hot and ready once you have the bread toasted.
While the chicken is heating, melt 4 tablespoons butter with 1/4 teaspoon freshly minced garlic and a pinch of salt in the microwave. Be sure to use a microwave safe dish and heat on high power for 30 seconds or until melted.
Spread the melted butter onto one side of each piece of texas toast and place on a foil lined baking sheet. Set the baking sheet under the broiler for about 30 seconds to a minute until the toast is golden brown. Always remember to leave the oven door ajar while broiling and watch it carefully so you don't burn the toast! I like my sandwich just a little crispy with just a hint of softness, so I only toast one side of the bread.
When the toast is beautifully golden and a little crispy, remove it from the oven and divide the barbecued chicken evenly among 4 pieces of garlic toast. I put the chicken on the un-buttered side and then top each with another piece of toast leaving the toasty part on the outside. Serve with my recipe for The Best Coleslaw Ever. Then relax and enjoy sitting down around the dinner table with the family while everyone savors the tangy goodness of this Barbecued Chicken Sandwich on Garlic Toast.

Ingredients
- 1 Chicken or leftover chicken
- 1 (18 ounce) bottle of your favorite barbecue sauce (I use Sweet Baby Ray's Sweet & Spicy)
- 4 tablespoons unsalted butter, cut into cubes
- 1/4 - 1/2 teaspoon freshly minced garlic - 1 clove should do fine
- pinch of salt
- 8 slices of Texas Toast
Instructions
