Shrimp Scampi Zoodles

Shrimp Scampi Zoodles is a lower carb version of a traditional Shrimp Scampi recipe typically served over pasta. This recipe still has all the fresh tasting garlic and buttery goodness of the traditional recipe, but is served over zucchini noodles, or the more fun way of saying it 'zoodles', to get rid of all those carbs from the pasta. Just for the record... I didn't miss the pasta at all!

Scampi is Italian for prawns, and traditional Italian Scampi recipes are actually made with a shellfish similar to lobster called langoustines. Here in the states Shrimp Scampi is generally cooked with a garlic butter wine sauce and served on a bed of pasta. It is an elegant dish, and if you've never made it before, you might be surprised at how quick and easy it is to prepare. Most of the ingredients are staples in my kitchen, except for the shrimp, but I love having shrimp in the freezer for those nights when I have to improvise dinner. When you don't have anything planned, Shrimp Scampi is a great go-to recipe, whether you serve it over zoodles or pasta, it is always a winner!

I make this all in one pan to cut down on the clean-up. Right now my dishwasher is on the fritz, so I'm using it as a ginormous drying rack. So not cool! I make a mess in the kitchen everyday, all day long! The dishwasher has been acting up for a few months now, and I just got tired of running it and having to then wash all the dishes by hand after, so I gave up on it. I am washing all the dishes by hand (UGH) until I decide on which brand to buy. If you have a dishwasher you love, please let me know! I am on the hunt, but it seems like most aren't really happy with their dishwashers for one reason or the other.

To make the zucchini into noodles I picked up a Veggetti I found at Walmart on the cheap. I have a difficult time spending money on 'things', so I chose to go with the lowest priced gadget I could find. Don't get me wrong, I like quality and am willing to shell out the cashola for it, but all I wanted to do was make noodles out of a zucchini. How hard could it be? I was going to be very disappointed if it didn't work out, because I was craving Shrimp Scampi but didn't want all the pasta carbs. I had to find a way to make zoodles! I was so happy when I was able to easily give that little Veggetti a twist and out came my beautiful zoodles!! It's so easy! Oh happy day!! I see lots of zoodle recipes in my future.

The taste of the zucchini noodles is wonderful. It really adds a nice touch to this Shrimp Scampi recipe. All of the flavors mingle nicely, and I love how the zoodles twist up on my fork just like pasta! The butter, garlic, and wine make a delicious coating for the zucchini and shrimp, but I'm not done yet! Top it all off with freshly grated Parmesan cheese for a real treat! Oooh I'm getting a craving again! Pardon me as I add shrimp to my grocery list...

Shrimp Scampi Zoodles

Shrimp Scampi Zoodles

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon freshly minced garlic
  • a pinch of crushed red pepper flakes
  • 1 pound large shrimp, peeled and deveined
  • salt and freshly cracked black pepper to taste
  • 1/4 cup dry white wine (I used Gallo Chardonnay)
  • 1 tablespoon freshly squeezed lemon juice
  • 3 medium sized zucchini spiralized into noodles (I used the Veggetti to spiralize my zucchini)
  • Grated Parmesan cheese for garnish (about 2 tablespoons or as desired)
  • Freshly chopped parsley for garnish (about 1 tablespoon or as desired)

Instructions

  1. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat. Stir in 1 tablespoon garlic and a pinch of crushed red pepper flakes and cook until fragrant. About 30 seconds.
  2. Add the shrimp to the skillet and cook until they are pink all over and cooked through. Shrimp cook quickly, so this should only take about 3 minutes. Season with salt and pepper and remove the shrimp from the skillet leaving the liquid in the pan. I remove the tails from the shrimp at this time by pinch the tail and gently pulling away from the meat. Discard tails.
  3. Add 1/4 cup white wine and 1 tablespoon lemon juice to the skillet and scrape and stuck on browned bits from the bottom of the skillet. Add the zoodles and cook until heated.
  4. Toss the shrimp back in the skillet with the zoodles. Top with about 2 tablespoons of grated Parmesan cheeese and give it a taste. Adjust the seasonings as needed and garnish with about 1 tablespoon of chopped fresh parsley. Serve and enjoy!
Yield: 2-4 Servings
Prep Time: 15 mins.
Cook time: 10 mins.
Total time: 25 mins.
