I don't know, it's a toss up. I think my Jalapeno Popper Stuffed Mushrooms might give these eggs a run for their money! I might have to declare it a TIE! I'm all about the jalapeno popper appetizers lately! Can you blame me? I didn't think so!
Another reason why I love these Jalapeno Popper Deviled Eggs is they are low in carbs, y'all! I can enjoy these whenever I want! As a matter of fact, the day I made these I had them for lunch, and for snack, and for dinner. I was OUT! OF! CONTROL! but they're low carb, so it's okay, right?
Don came home and they were ALL GONE! I accidentally left the jalapeno top on the cutting board which gave me away. He looked in the fridge for what goodies I made and came up empty! I had to confess I ate them all and had nothing planned for him to eat for dinner (hanging my head in shame). He was so sad. Don't worry about him, though. He did just fine. I have gotten pretty good at making stuff up when it comes to dinner. I cooked some shrimp and veggies in a garlic wine sauce and put that over pasta with lots of Parmesan cheese. Oh no! Don't feel sorry for him!
Have you ever wondered why they are called "Deviled Eggs"?
Websters defines the word Devil as the most powerful spirit of evil in Christianity, Judaism, and Islam who is often represented as the ruler of hell. An evil spirit. A person who does bad things or causes trouble usually in a way that is not too serious.
That's a strong word for innocent little eggs, don't ya think? After a little research I found out the term became associated with spicy or zesty food in the 19th century. Traditional deviled egg recipes typically contain mustard adding a spicy or zesty flavor earning them the deviled name. So if traditional deviled eggs are spicy, then Jalapeno Popper Deviled Eggs are extra devilish. Which makes them extra delicious in my book!

Jalapeno Popper Deviled Eggs

Ingredients
- 6 hard boiled eggs, peeled and halved
- 3 tablespoons cream cheese, softened
- 1 jalapeno pepper, seeded and chopped finely (about 2 tablespoons)
- 3 tablespoons finely shredded cheddar cheese
- 2 slices thick cut bacon, cooked and crumbled
- 1 tablespoon mayonnaise
- salt and freshly ground black pepper to taste
- 1 tablespoon freshly chopped cilantro for garnish
Instructions
- Soften 3 ounces cream cheese in a microwave safe bowl for about 15 seconds in the microwave. This time will vary depending on your microwave's power, so be careful and watch it closely. You don't want to melt it, just soften it.
- Scoop out the egg yolks and add them to the softened cream cheese. Next add the finely chopped jalapeno, 3 tablespoons cheddar cheese, the crumbled bacon, and 1 tablespoon mayonnaise. Mix this up well and give it a taste. Add a pinch of salt and some black pepper and mix it up again. Give it a taste and adjust the seasonings to your liking. Keep in mind jalapenos vary in size and heat, so you might want to add more to amp up the heat if needed.
- Spoon the cream cheese mixture generously into each egg. Garnish with cilantro and enjoy!

DeleteI always feel bad when I am busted by my family, having eaten something they didn't get to try. I am sure these deviled eggs would be in that category. I just adore deviled eggs.
