We are celebrating picnics today! Who can resist spending the day outdoors with family, friends, and great food?! Not this girl! I'm all-in when it comes to picnics or anything that involves food for that matter <wink>.
Gathering together around the picnic table over the years helped to nurture our close friendships and create unbreakable bonds. Now that the kids are all grown and off in college or starting new and exciting careers, I cherish those memories and look forward to when everyone can gather together again.
Today I am sharing a recipe we have enjoyed with friends and family for many years. My Grilled Honey Chicken Kabobs recipe is easy to make and always a favorite! I hope you enjoy it as much as we do. I also hope to inspire you to fill up your picnic basket deliciously to create those unbreakable bonds and cherished memories.
Kabobs make great picnic food because they're on a handy stick. I mean what's better than being able to carry your food around and take bites in between chatting it up with friends? Any food on a stick is just more fun for that exact reason! IMHO anyway <smile>.
I also like how I can assemble the kabobs at home, so they are easy to take on-the-go and ready to grill anywhere. When working with wooden skewers like I did, be sure you soak the skewers in water for several hours or even overnight. Soaking the skewers prevents them from charring. I don't know anyone who likes a charred skewer!
Something else I like to use when barbecuing, or anytime I have a bunch of stuff to get from one place to another, is a baking sheet. Using a baking sheet as a tray brings a rustic look that I really love. There is just something about the imperfection of a used baking tray that appeals to me. It has character, and I like that :) It is also wide, so you can pile things on to carry just about everything you need, and they make great serving trays too! I usually put down some parchment paper and pile on these Grilled honey Chicken Kabobs so everyone can grab and enjoy!

Grilled Honey Chicken Kabobs

Ingredients
- 1/4 cup vegetable oil
- 1/3 cup honey
- 1/3 cup soy sauce
- salt and pepper to taste
- 2 pounds of skinless, boneless chicken breast cut into 1 inch cubes
- 1 tablespoon freshly minced garlic
- 2-3 yellow onions, cut into, approximately, 2 inch pieces
- 1 red bell pepper, cut into, approximately, 2 inch pieces
- 1 (16 ounce) container fresh white mushrooms, whole, cleaned
- 1 pineapple, cored and cut into cubes
- freshly chopped parsley for garnish
- Skewers (I used 6" wooden skewers)
Instructions
- In a large bowl, whisk together 1/4 cup vegetable oil, 1/3 cup honey, 1/3 cup soy sauce, and salt & pepper to taste. Reserve about a 1/3 cup of the marinade for basting.
- Season the chicken cubes with salt and pepper and place in the marinade with 1 tablespoon minced garlic, onions, red peppers, and whole mushrooms. Cover and refrigerate overnight. Remember if you are using wooden skewers to soak them in water overnight as well.
- When ready to cook, oil the grill grates and preheat the grill to mid-high heat.
- While the grill is heating, drain the marinade from the chicken and vegetables. Discard marinade. Assemble the kabobs by skewering chicken, pineapple, mushroom, red pepper, onion, and another piece of chicken (if you have room for it) onto each skewer until you've used up all the ingredients.
- Carefully spray the grill grate with cooking spray and place the skewers on the grill. Close the lid and allow them to cook for 4 to 5 minutes without moving them. After 5 minutes, carefully turn each skewer over (I use tongs to do this). Close the lid and cook another 4 to 5 minutes, brushing with the reserved marinade for that last minute. Cook until the chicken juices run clear and the chicken is no longer pink inside. If the skewers stick to the grate that could mean the heat is too low or they just need a little more time to cook. When they are ready to turn, they should release with little sticking. Serve and enjoy!

DeleteThese are just perfect for a picnic! I love that you have lived in the same house since you were married! Hubs and I bought our first home last year, and we are slowly getting to know our neighbors, and I hope to have great meals with them in our home soon!
