Strawberry Clafoutis Recipe Tips
This strawberry clafoutis dessert comes together in minutes! The hardest part is probably hulling the strawberries! It's true! Once those strawberries are hulled you just toss them in sugar and let them mingle while you whip up the batter in the blender. Yes, the blender!
Seconds later, when that batter is ready to go, you toss the strawberries in a buttered, oven-safe skillet and then pour the batter over those lush berries. Bake it in the oven for about 35 minutes and voila! You have a stunning strawberry clafoutis ready for a sugar shower! This impressive dessert doubles as breakfast/brunch too!
Oh yes indeedy! Strawberry Clafoutis makes a tasty breakfast recipe. I've been known to drizzle a little bit of maple syrup all over my Clafoutis. The taste reminds me of french toast stuffed with scrumptious strawberries! It is so good!
How to Pronounce Clafoutis
The name, Strawberry Clafoutis, is fun to say too! It is pronounced CLAH-FOO-TEE. Say that 10 times fast! That'll get ya tongue tied! I end up saying something like CLAH-FLOO-TEE. I always want to put that extra 'L' in there for some reason. Go figure...Easy Reipe with a Fancy Name
My recipe for Strawberry Clafoutis is not overly sweet. There is a little bit of sugar, but the sweetness really depends on the strawberries. My strawberries were very sweet and that sweetness combined with the creamy egg filling makes a light and satisfying dessert or brunch recipe.I hope the fancy french name, Strawberry Clafoutis, and impressive look doesn't intimidate anyone from making this recipe. Strawberry Clafoutis

Ingredients
- 1 lb fresh strawberries, hulled and sliced
- 1 tablespoon sugar
- 3 eggs
- 1 cup milk
- 2/3 cup all purpose flour
- 1/4 cup sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon salt
- powdered sugar
Instructions
- Preheat the oven to 350°F. Generously butter a 10.5" Cast-Iron Skillet and set aside.
- Hull the strawberries. To make quick work of it, I use the OXO Strawberry Huller. You can see me demonstrate how it works in this video. Toss the strawberries with 1 tablespoon sugar and set aside.
- In the pitcher of a blender, add 3 eggs, 1 cup milk, 2/3 cup all-purpose flour, 1/4 cup granulated sugar, 1 1/2 teaspoons vanilla, and 1/4 teaspoon salt. Give it a quick blend. It will only take about 20 seconds to combine.
- Arrange the strawberries in a single layer on the bottom of the buttered skillet and pour the batter over the strawberries.
- Bake in the preheated oven for about 35 minutes. Oven temps will vary, so I always recommend keeping an eye on it. The Clafoutis should be beautifully puffed and golden with no giggle in the center. Sprinkle with powdered sugar and serve warm. This goes great with ice cream, a dollop of whipped cream or Mascarpone cheese, and even some maple syrup for an impressive brunch dish. Enjoy!
