We love homemade pizza! Not only do we love eating it, but we love making it too! When Madison was little, we always had a pizza night where we would make homemade crust and we would experiment with different toppings. It's fun to come up with new combinations, but white pizza is our all-time family fave!

She has a magic touch and makes a mean pizza! That has been our favorite white pizza for years now! I've watched her make it, but I've never quite been able to duplicate it.

Recently, I made Spinach Artichoke Stuffed Shells, and Don loved the flavor so much he suggested it would make a good white pizza. I had some Bechamel sauce leftover after making the shells, so I thought 'why not?' A Spinach Artichoke Pizza sounds like a winner to me and the Bechamel sauce with Gruyere cheese would make a delicious white pizza base. Although, I made this pizza, Don gets all the credit!! This is by far the best white pizza we have ever tasted and it was all Don's idea! He has some good ones every so often - I guess I'll keep him around <wink>

This pizza is easy to toss together especially if you already have some Bechamel Sauce on hand. I like to whip up the Bechamel and keep some in the freezer. Then I just add the cheese to it and spread it on the pizza...

Top the cheese sauce with Fresh Baby Spinach and marinated artichoke hearts. I know it looks like a LOT of spinach, but don't worry, the spinach will wilt and be just the right amount of topping for this pizza! I promise!

Next up is the cheese! I know we already have a delicious Gruyere cheese sauce for the base, but come on, this is pizza!! We need to add some freshly grated Mozzarella and Parmesan on top...

Now we pop that in our preheated oven and bake until the cheese is nice and melty...

All there is left to do is pop open a bottle of our favorite wine and enjoy! I am pairing this with Gallo Family Vineyards Chardonnay. I like how this medium bodied wine with rich fruit flavors and a hint of vanilla compliments the cream sauce on this pizza. However, if you prefer a red wine, I recommend the Merlot.

Spinach Artichoke Pizza Recipe

Spinach Artichoke Pizza Recipe

Ingredients

  • 16 ounce pizza dough
  • 1 tablespoon olive oil
  • 1/2 of my Bechamel Sauce Recipe (white sauce)
  • 1/2 cup freshly shredded Gruyere Cheese
  • 1 (6 ounce) bag of Fresh Baby Spinach
  • 1 (6.5 ounce) jar of marinated artichoke hearts, quartered and drained
  • 1 cup shredded Mozzarella cheese (more to taste)
  • 1/4 cup freshly grated parmesan cheese (more to taste)

Instructions

  1. Preheat oven to 400°F.
  2. Roll out pizza dough to a 16" round and brush with 1 tablespoon of olive oil. Bake in the preheated oven about 10 minutes or until it starts to brown slightly.
  3. While the pizza dough is cooking, heat 1/2 of my Bechamel Sauce Recipe in a sauce pan over medium heat. When hot, remove from heat and add 1/2 cup shredded Gruyere cheese. Stir until cheese is melted. Give it a taste and adjust the flavors as needed (psst...guess what you just did? You made Mornay Sauce! Bechamel+cheese=Mornay Sauce). When the pizza dough is just starting to brown, remove it from the oven and top evenly with Mornay Sauce.
  4. Top the cheese sauce with 6 ounces of fresh baby spinach and 6.5 ounces of the drained and quartered artichoke hearts.
  5. Top everything with at least 1 cup shredded Mozzarella cheese and 1/4 cup grated parmesan.
  6. Place the pizza in the oven and cook until cheese is nicely melted and a little browned - about 15 minutes. Cook time will vary, so be sure to keep an eye on it and remove it when the crust is baked to your liking. Allow the pizza to rest for about 5 minutes. Slice and enjoy!
Yield: 1 pizza
Prep Time: 10 mins.
Cook time: 25 mins.
Total time: 35 mins.

    1. Thanks, Dorothy. Fresh spinach that is wilted right on the pizza is one of my favorite toppings. I used to go to the trouble of sauteing it before adding it as a topping, but it really isn't necessary :)
