I love that these taquitos are baked instead of fried. Although, frying does result in an overall crispier taquito, it is just too messy for me. I want an easy clean-up! Plus, fried foods are generally not very good for you. I've found that baking the taquitos with a quick run under the broiler gets them just the right amount of crispy for me, and clean up is a breeze, so that's a huge bonus!
I don't share a whole lot of slow cooker recipes here on Life Tastes Good, because I haven't found too many that I absolutely love. Usually, I find them lacking flavor and texture, but that is far from the case with this recipe! The creamy, cheesy filling with just the right amount of spiciness all wrapped up in a crunchy tortilla makes this one of my very favorite slow cooker meals. I did use flour tortillas, as we prefer them to corn, but feel free to use corn tortillas for a more traditional taquito. I hope you enjoy it as much as we do!
