So what's the deal with Snickerdoodles? They have a super cute name! I mean, I really love the name, but can you believe I've never had a Snickerdoodle cookie before? It's true! Recently it seems like I've seen Snickerdoodles everywhere, so I decided to give them a try to see what all the fuss is over them. Because the Snickerdoodle has such a fun name, I was expecting a super fun cookie, right? WRONG?! Snickerdoodles are BORING!

I mean they taste fine. What's not to like about cinnamon and sugar, right? But with so many other delicious cookies in the cookie jar, let's just say they wouldn't be my first choice...

By now you must be wondering why I even bothered to share this recipe with you. To tell you the truth, I almost didn't! I only share my most favorite recipes, and this one certainly wasn't it! 

That is until I had the genius idea that salvaged the Snickerdoodle for me - WHITE CHOCOLATE! White chocolate makes everything better! It's true, y'all! Once I dipped these little cinnamon sugar cookies into the smooth, creamy goodness of white chocolate - a STAR was born! Don and I devoured these delicious little cookies and were sad when we gobbled up the very last one! Which reminds me... I NEED to make more!

White Chocolate Dipped Snickerdoodles

White Chocolate Dipped Snickerdoodles

What do you get when you combine a simple cinnamon sugar cookie with smooth, creamy white chocolate? White Chocolate Dipped Snickerdoodles of course!

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 3 tablespoons sugar
  • 1.5 tablespoons ground cinnamon
  • 11 ounces white chocolate
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 400° F. and line 2 baking sheets with parchment paper.
  2. Cream together 1/2 cup butter, 1/2 cup shortening, 1 1/2 cups sugar, 2 eggs, and 2 teaspoons vanilla extract.
  3. Add 2 3/4 cups all-purpose flour, 2 teaspoons cream of tartar, 1 teaspoon baking soda, and 1/4 teaspoon salt. Mix just to combine.
  4. In a small bowl, combine 3 tablespoons sugar and 1 1/2 tablespoons ground cinnamon and mix to combine.
  5. Separate dough into about 48 pieces. Working with one piece of dough at a time, dip both sides into the cinnamon sugar mixture and roll into a ball. Gently roll the ball in the cinnamon sugar mixture again to coat and place the dough ball on the parchment lined baking sheet. Continue with the remaining dough pieces until all are covered in cinnamon sugar. Place them 2 inches apart on the parchment lined baking sheets.
  6. Bake 8-10 minutes or until set. Remove and transfer to a wire rack to cool completely. The cookies will be soft in the middle and a little bit crunchy around the edges.
  7. In a microwave safe bowl, mix the white chocolate chips with 1 tablespoon vegetable oil and heat for 30 seconds. Stir until smooth. If needed, microwave for an additional 15 seconds and stir until smooth. Dip each cookie into the melted white chocolate to cover half the cookie and place on parchment paper to dry. Enjoy!!
Yield: about 4 dozen cookies
Prep Time: 20 mins.
Cook time: 10 mins.
Total time: 30 mins.

  11. I never had a snickerdoodle either until right around the time I started blogging! I seemed to like them more than you did I think. However, I admit, I've never made them again since. I tend to stick to cookies Grumpy will eat....however, coated in WHITE chocolate....Grumpy would DEVOUR these!

    1. LOL Christie! I'm glad I'm not the only one. I thought I was crazy when I was stuck with a whole batch of ho-hum cookies. I knew we would never eat them as they were. So glad the white chocolate saved the day! Of course, that means we ate WAY too many cookies between the 2 of us, but we couldn't help ourselves - they are addicting!
