I love how fun and easy these bite sized cookies are to make. The adorable small size makes them a treat to eat too! The rich chocolate flavor combined with the crunch of graham crackers and smooshy marshmallow makes this a cookie everyone will love!

To make these cookies, I use 1/5th of my Chocolate Cookie Dough Recipe and form 1" balls until I've used all the dough. It makes around 2-3 dozen. Then roll each piece in crushed graham crackers and place on parchment lined baking sheets. Using the back of a small measuring spoon, make an indentation in the center of each dough round just big enough to fit a mini marshmallow. Pop a marshmallow in the center and bake. Immediately after removing from the oven, top with a semi-sweet chocolate chip and enjoy!
