Sweet Potato Pie Parfait is a deconstructed Mrs. Smith's pie and cool whip recreated into a stunning dessert! Everyone will be impressed by your culinary skills when you serve this new twist on an old favorite! You only need 4 ingredients and about 10 minutes to put these together. No baking required! #ThankfullySweet
I like to keep a pie, already baked, on hand for when unexpected guests stop in during the holidays, but instead of just serving the same old pie, I came up with this incredibly beautiful parfait that is easy to make. All you need is a Mrs. Smith's pie that you prebaked, Cool Whip, and your favorite nuts...
Carefully scoop the Sweet Potato out of the pie crust and into a bowl. Refrigerate until ready to use...
Now you have a beautiful pie crust shell you are going to
Grab your favorite nuts and pound them to smithereens!! This pie deconstruction is violent work!
Melt some butter in a skillet, and remove the pie shell from the tin and break into pieces. Add the pie shell pieces and the smashed nuts to the butter in the skillet and cook, stirring, until crumbly and toasted. Smash up the big chunks with the back of your spoon. Pie deconstruction brings out the beast in me I guess with all this pounding and smashing going on!
Now we're ready to construct the parfaits!! Divide the toasted pie crust crumbs evenly among your serving dishes, reserving a couple tablespoons for garnish. This easily makes 6 parfaits. I used 4 ounce glasses and could have even gotten 8 desserts if needed.
Top the pie crust crumbs with the reserved sweet potato pie filling. You can just use a spoon, or you can get all fancy and pipe it in. I piped because the glasses I used have a bit of a narrow opening, so it was easier for me to get the sweet potato filling all the way in there without making a huge mess!
