Vanilla Poached Pears with Apricot Sauce #CleverlyPoached

Poached Pears make such an elegant dessert and can be done in a variety of ways.
I used a simple vanilla flavored sugar water to poach these pears. Once the pears were tender, I set them aside and boiled down the poaching liquid. Then I added some apricot preserves to make a delicious sauce to serve with the pears. It is sweet and delicious! I like to serve this warm with some vanilla bean ice cream!
Do you know how to select pears? Pears are not left to ripen on the tree. They are harvested before they ripen, so if you come across a pear that is less than ripe at your local market, it's okay, it will ripen and be ready to eat!
For best results choose pears grown in Oregon or Washington state with the USA Pears sticker. Pears should be bright and fresh looking with no bruises or damage. Test for ripeness by applying gentle pressure near the 'neck' of the pear with your thumb. If it gives in to the pressure it is ripe and ready to eat! Pears that are soft around the middle might be overripe.
Store unripe pears in a warm place and check for ripeness daily. Once ripened, you'll want to keep them in the coldest part of the fridge.

Vanilla Poached Pears with Apricot Sauce

Ingredients
- 1 1/2 cups water
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 6 Pears peeled and cored from the bottom. I used Bosc
- 1 cup apricot preserves
- 2 tablespoons wine. I used a Pink Moscasto, but any pink or white will do
- 1 tablespoons cornstarch
- pinch of sea salt to taste
Instructions
- In a medium saucepan, combine 1 1/2 cups water, 1/2 cup sugar, and 1/2 teaspoon vanilla. Bring to a boil and stir until the sugar is dissolved.
- Reduce the heat to medium and add your pears. Cover the pot and simmer until the pears just start to get tender. This will vary depending on how ripe your pears are. Mine took about 10 minutes, but if your pears are overly ripe they might take just 5 minutes. If you are working with unripe pears it could take 15-20 minutes. The great thing about poaching is you can use unripened fruit with good results. It just takes a little longer. Once the pears are tender, remove them from the liquid. Set aside and keep warm.
- Turn up the heat to mid-high and boil the liquid until reduced by 1/3. This should take about 5 minutes. Add 1 cup apricot sauce to the reduced liquid and boil until the sauce is melted and combined with the liquid.
- Dissolve 1 tablespoon cornstarch in 2 tablespoons wine to create a slurry. Add the slurry to the liquid and cook another minute or so until thickened. Taste the sauce and adjust the flavors to your liking. Serve warm with the sauce. Add a scoop of vanilla bean ice cream if you like and enjoy!
