Mornings can be very hectic, but that doesn't mean you have to sacrifice a nutritious and delicious breakfast. With a few tips and shortcuts you can enjoy this delicious Breakfast on-the-go Egg Sandwich to keep you going all morning!!

Don loves a good hearty breakfast, but sometimes I am so busy trying to get us out the door it can be a challenge to get breakfast done too.

I've found a little prep work, as well as a little help from some convenient frozen waffles goes a long way! 

Tip: Pre-make the bacon. I line a baking sheet with heavy duty foil, place the bacon strips in a single layer and pop the baking sheet in a cold oven. Then turn on the oven to 400°F. and set the timer for 17 minutes. Done! Easy peasy clean up too!

When the morning rolls around, and I need to make a satisfying breakfast quickly, I already have the frozen waffles and bacon ready to go. I just need to scramble up some eggs...

Our friends gifted us with some farm fresh eggs recently! I love the varying colors and farm fresh eggs have such wonderful flavor!!

For scrambled eggs, I usually toss in whatever I have on hand that sounds good. I usually have pre-chopped onions and peppers, so I definitely add those and we love spinach in our eggs too. I beat the eggs, toss in some onions, peppers, and spinach and pour it all into the pan. I cook the eggs on medium for about 4 to 5 minutes until cooked through. Then I add salt and pepper and they're ready to go!

While the eggs are cooking, I get my other ingredients ready. I pop the frozen waffles in the toaster and heat the bacon in the microwave. It's also a good time to get out the cheese to have it ready to go too!

I have found the frozen waffles to be super convenient and they add a nice flavor to the breakfast sandwich that plain old bread just can't match!

While shopping in Publix the other day, I noticed Aunt Jemima Frozen waffles come in resealable packaging to keep them fresh! I love that! I also got #4MoreWaffles in this package! On top of the great value already, I saved $1 with this coupon. I paid just $1.99 for 14 waffles! Can't beat that!!

Breakfast On-the-Go Egg Sandwich

Ingredients

  • 2 eggs
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped bell pepper
  • 1/4 cup fresh spinach
  • 1 tablespoon unsalted butter
  • salt and pepper to taste
  • 1 slice thick cut, pre-cooked bacon, heated
  • 1 slice of your favorite cheese
  • 2 Aunt Jemima Frozen Waffles, toasted

Instructions

  1. Beat 2 eggs. Add 1 tablespoon chopped onion, 1 tablespoon chopped bell pepper, and 1/4 cup fresh spinach. Heat a nonstick skillet to medium and toss in a slice of bacon to heat. Remove bacon.
  2. Toast the waffles.
  3. Pour egg mixture in to skillet and add 1 tablespoon butter. Cook, stirring, until cooked through. About 4-5 minutes.
  4. Squish the scrambled eggs together. You can use a mold if you like. A one cup measuring scoop works well. Fill the measuring scoop 1/2 full with scrambled eggs and press down to squish them in there good. Gently pry out the egg mold onto the toasted waffle. Top with bacon, a slice of cheese. I like to place this under the broiler until the cheese melts. About 30 seconds to a minute. Then top with the remaining waffle and enjoy!
Yield: 1 sandwich
Prep Time: 5 mins.
Total time: 5 mins.

    1. Thanks, Sheena! We love breakfast sammies too! I always have them ready for when we are headed out the door for a road trip. We usually leave early in the morning, so I wrap them up and keep them warm until it is a decent hour for eating haha.
