It's going to be guacamole week on the blog! So read on to see what's coming up and don't miss the great tip on how to keep your guacamole fresh and green! I betcha can't guess what it is!

You might be asking why did you choose this week for guacamole week? That's a good question! Too bad the only answer I have is because I forgot to buy chips... This is what happens when I don't stick to my grocery list. I see something that looks good-avocados in this case-and then forget a very important aspect. Happens every time . So what's a girl to do with lots of guacamole on hand and just bottom of the bag crumbs from the pita chips I bought when I made my friend's delicious Jalapeno-Cilantro Hummus?

Well...this girl made a good-for-you and yummy Poached Egg on Toast Breakfast with Guacamole, of course!! I also made Grilled Cheese with Guacamole - yummm! And this is why it is guacamole week on the blog, so get your avocados ready!!

Do you know the best way to keep your guac fresh and green? I do! It's water! Yep! When ready to store your guacamole (seriously though, who has leftover guac?), flatten it on the top and cover with about a 1/2 inch of water. Because the guac is dense the water doesn't absorb easily, and the water keeps the air out avoiding oxidation. That sounded smart! Cover and refrigerate for up to 3 days and it will stay fresh and green for you. When ready to use, just pour off the water and stir - you'll never know the diff! Sounds gross doesn't it? I thought so too. Don was reading Yahoo News, as he always does, when he found this tip, as he always does haha!! Madison and I tease him constantly because he gets all this random, but good info, from Yahoo News and then he says "Do you know..." and on this particular day it was "Do you know how to keep your guacamole from turning brown?" I answered with the usual tricks: lime juice, cover it in olive oil... and as he always does he says "nope" and then amazes me with his wisdom (and I added that last part to see if he actually reads my blog hahaha). Anyway, I tried the water tip and it worked beautifully! So now we all have Don to thank for being able to store the rarely leftover guacamole. Or I guess y'all have me to thank because I share. You're welcome!

Simple Guacamole Recipe

Ingredients

  • 2 Haas Avocados
  • 1/2 tablespoon freshly minced garlic
  • Juice from 1/4 lime
  • salt and pepper to taste

Instructions

  1. If you are making your guacamole the same day you want to purchase ripe avocados that yield to gentle pressure. You don't want squishy, overripe fruit ever! If you are making your guac in a couple days then choose unripe fruit that is firm to the touch. It will ripen and you'll be able to use in a day or two.
  2. Use a knife and go all the way around the avocado and then twist and open. Remove the pit and squeeze each 1/2 of the avocado over the dish you are using to make the guacamole. Repeat with the 2nd avocado.
  3. Add 1/2 tablespoon freshly minced garlic. There is no hard and fast rule as to the amount of garlic you put in your guac, so go with what you like.
  4. Juice 1/4 of a fresh lime into the avocado garlic mixture. Again, there are no rules here! Add as much or as little lime as you like. I like to start with just 1/4 of a fresh lime. I rarely add more though, but give it a taste and add more if you prefer.
  5. Stir the mixture to combine and smush it all together. A mortar and pestle works very well when making guacamole, but you can use the back of a large spoon to smush it all up. Add a pinch of salt and a little bit of pepper and mix that in.
  6. Add a pinch of salt and a little bit of pepper and mix that in. Give it a taste and add more as needed. I like to add a little at a time and keep tasting to get it just right. Good to have chips on hand for the multiple taste testings when you are making your guacamole :o)

  1. We have guacamole so often at our house that my son actually calls avocados "guacamoles"
    I'm all about simple too.. I add diced tomatoes to mine, no garlic. Just salt, lime and a small diced tomato.

  4. My daughter would LOVE this recipe. The one that I usually make has tomatoes, cilantro and onion, and she always complains about those three ingredients in it!

    This is absolutely stunning! :) I LOVE fresh guacamole & I'm especially drawn to this recipe because you've kept it simple but authentic! All I need now is a tortilla chip & the ability to reach through the screen & take a nibble!
