Grilled Cheese with Guacamole

I love guacamole with just about anything! If you missed my Simple Guacamole Recipe I posted earlier in the week, you should definitely check it out. It's easy and no fuss, and there's a great tip for keeping your guacamole fresh and green in the unlikely event you have leftovers. That doesn't happen often 'round these here parts!

But I did make up a batch to test out the tip on how to store it for up to 3 days without turning brown. So, yeah, I did it and it worked! I made this delicious grilled cheese with guacamole after the guac had been in the fridge for 3 days. You can see it is still fresh and green and bee-u-ti-ful!

This sandwich is super easy to make, of course, and it is really good! Lots of melty cheese with yummy, delicious, garlicky guacamole! This makes for a quick and easy meal that is super versatile! Pair it with chips, fries, soup, whatever you like!

Delicious Beef Stroganoff

And it's pretty easy too! Be sure to use fresh ingredients! No mushrooms from a can or a jar!! We are using fresh mushrooms in this recipe and taking advantage of all their wonderful flavor!!

In addition to fresh mushrooms, I like to use beef base instead of broth. Because it is not possible for me to always have homemade stock on hand, I use Better Than Bouillon Bases in place of broth and stock in all my dishes! I love the stuff and keep many different flavors on hand. The beef base contributes a richer and more natural flavor to my Beef Stroganoff. I cannot achieve this using a store bought beef stock or broth.

It also takes up much less room in the fridge, and I don't have to worry about any unused portions going to waste! I like that! I use just what I need and pop the cap back on for next time!

Double Tomato Bruschetta

For starters we have Double Tomato Bruschetta. Bruschetta is an antipasto that is very easy to make and super delicious to eat!! Antipasto simply means 'before the meal'. My Double Tomato Bruschetta makes a perfect beginning to our Easy Valentine's Day Dinner.


You can prepare the topping early in the day or even the day ahead! Toss it all in a bowl, cover it, and pop it in the fridge until ready to use! It really doesn't get much easier than that! I actually made this cake 3 times with 3 different fillings! Well, 4 really. I promised to save my mom a piece, but before I knew it there was none left! Oops! In our defense, it was pretty darn good. So, I made it one last time with our favorite filling and gave her the whole cake, because I'm her favorite daughter :o), and I need to maintain that status! It takes work when you are 1 of 5 daughters!!

Tilapia Burger

Grilled Tilapia with Mango Salsa was the first fish recipe I tried and actually loved! I have been a fan of tilapia ever since. Truth is, tilapia doesn't taste like fish. It really doesn't taste like anything, which is a good thing for a non-fish eater who wants to eat fish for the health benefits but just can't stomach it. This girl! 

Last week I came across a recipe for Ahi Fish Burgers, and I thought 'ahi is not toooo fishy, and I like the idea of a burger, so why not?' I'll tell you why not... because I had a couple of tilapia fillets in the freezer I wanted to use up. I was a little bummed and then inspiration struck! 'If you can make a burger out of ahi, why can't you make it out of tilapia??' Why not indeed! my brain must have been firing on all cylinders that day, or I just really wanted a burger made out of fish, which is probably more realistic, but either way my idea just got better! 'why not base it on my favorite fish recipe?' No reason! Sounds good to me!! And it was good!! No, it was great!! 

This is a delicious, good-for-you burger that is bursting with flavor! The salsa is ah-mazing, and finished with a toasted bun and some baked sweet potato fries... oh yeah! Life Tastes Good! You've got to try this!
