Sun-Dried Tomato Basil Orzo



Orzo is the Italian word for barley, but orzo pasta is a form of macaroni that looks like a large grain of rice. I love orzo. It is easy to make and has a good texture. I prefer it over rice any day!  

This recipe made with sun-dried tomatoes, fresh basil and Parmesan cheese is so tasty. It is full of freshness that is delicious eaten hot or cold!

Ingredients
2 tablespoons butter
1 cup orzo pasta
14.5 ounces water
2 teaspoons chicken base
1/4 cup chopped fresh basil leaves
1/3 cup chopped oil packed sun-dried tomatoes
1/2 cup grated Parmesan cheese
salt and pepper to taste

Directions
Melt the butter in a skillet over medium heat and add the orzo. Saute until lightly browned. Add the water and the chicken base and bring to a boil. Cover, reduce heat to low, and simmer for 15 minutes or until the liquid is mostly absorbed. Remove from heat and add tomatoes, basil, and Parmesan cheese. Give it a little taste and add the salt and pepper to your liking. Always add salt after the Parmesan as it is naturally salty.  Serve this warm or cold.
