Broiled Lobster Tails & Baked Sweet Potato Fries

Mmmmmm....Lobster! It's been a long time since we've had lobster here in the Myers' house. It is a real splurge, but this past week we had lobster for dinner TWICE!!  Twice in one week??  You are probably thinking we were one of the Powerball winners, right??  No, we didn't win (didn't play), but it was a special week. Don and I celebrated our 23rd wedding anniversary! Hard to believe! Two days after our anniversary is Don's birthday, so we took advantage of a great sale our local store was having, and we enjoyed succulent, delicious lobster tails on the cheap...twice!

Lobster prices have been dropping, so watch for great sales and broil up some tails!
  This recipe is so easy and quick too, and it cooks up just right.


Ingredients
  • 2-4 whole lobster tails
  • 1/2 cup butter, melted
  • salt to taste
  • ground white pepper, to taste

Directions
  • Preheat the broiler
  • Place lobster tails on a foiled lined baking sheet.  If your tails are not already cut, carefully cut open the top side of the lobster tail with a sharp knife or kitchen shears. Pull shells apart slightly. Using a knife, get under the meat and separate it from the shell, leaving it attached near the tail end. Pull the meat up to sit atop the shell. Season the meat with butter, salt and pepper. We used about a teaspoon of butter and a pinch of salt and pepper for each tail.
  • Broil tails until lightly browned and meat is opaque, about 7-8 minutes. Remember to leave your oven door ajar when broiling and turn on your vent fan.
  • Serve with remaining butter on the side and Sweet Potato Fries

Baked Sweet Potato Fries

Ingredients (4 servings)
2 sweet potatoes cut into strips
2 teaspoons Italian seasoning
1 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
2 tablespoons olive oil

Directions

  • Preheat oven to 400 degrees
  • Line a baking sheet with foil and spray it with cooking spray. Place the cut sweet potatoes on the tray and top them with seasonings and the olive oil. Mix well to cover each potato. Space them out so they are in a single layer and each potato strip has space around it. Use more trays as needed. 
  • Bake in pre-heated oven for about 15-20 minutes and then flip each one and bake another 15 minutes. Enjoy!

    1. Thanks for having me at the linky party! The sweet potato fries are so delish! and they paired nicely with the lobster. My daughter actually made this, and I was a little skeptical about the pairing, but she was right...as usual ;o). Have a super day!

  2. My lobsters are frozen...should I boil them for a little first and just take them out before they're done and finish cooking them in the broiler? My girlfriend and I just wanted to try something different than the standard broiled lobster.

    1. Hi Andrew, thanks for stopping by! Personally, I would not boil them - they lose flavor. Thawing them completely before cooking will give you the best taste and texture. Thaw in the fridge for about 8-10 hours. This time will vary depending on the size. If you don' t have that kind of time you can put the tails in a tightly sealed bag and immerse them in water for a couple hours (in the fridge). Enjoy and Happy Valentine's Day!
