Yogurt Parfait Pancakes make a scrumptious breakfast that fills us up deliciously and keeps us going all morning long. Don and I love perfectly cooked pancakes that are fluffy on the inside and slightly crispy on the outside. Instead of drenching these pancakes in syrup, I topped them with a delicious blend of yogurt and multi-grain granola with real fruit and crunchy nuts. Crunchy. Cool. Yum!!
On the weekends, Don likes to enjoy a "big breakfast", as he calls it. Over the years it's become clear the 'big breakfast' is basically anything that HE doesn't have to make himself (back off girls, he's all mine). I don't mind though. I love sleeping in a little on the weekends only to get up and enjoy a nice, home cooked breakfast together. He leaves early for work during the week, so the weekends are the only time we can enjoy that most important first meal of the day together.
It is super important to eat a hearty breakfast that includes whole grains, but Don leaves the house at 6:30am on work days, and this girl is still sleeping! By making a double batch of pancakes on the weekend, he can enjoy a quick and satisfying breakfast before work that he makes all by himself, so I can go right on

By simply adding cold milk, the dry ingredients transform into a tasty yogurt treat! It really couldn't be easier - just add cold milk, stir, and eat! We love the flavors too! I used the Strawberry Almond for my Yogurt Parfait Pancakes this go around, but we also enjoy the Apple Cinnamon and Raspberry Pecan flavors too! You really can't go wrong! They are all so tasty!
Making fluffy pancakes with a beautifully golden outside that has just a hint of crispness is actually pretty easy. You just need a few tips. Sometimes it might take a few tries to get your pan heated just right, but once you get it you'll be making perfect pancakes every time! I start by heating a stainless steel or cast iron skillet to medium heat. If you are using an electric skillet, I have found 300°F to be just right. While the pan is heating, I mix 2 cups flour, 1/4 cup of sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, and 1 teaspoon salt in a large mixing bowl...
Next, whisk 2 eggs into 1 1/2 cups buttermilk. Pour the buttermilk mixture into the dry ingredients...
and stir until just combined. Be careful not to over mix. Lumps are okay.
To achieve a beautiful golden brown pancake, I pour a little vegetable oil on a paper towel and coat the heated pan. I recommend using tongs to hold the paper towel so you don't burn your little fingers! I was living on the edge in this picture, so do as I say not as I do to be on the safe side! The oil should just coat the pan. You don't want the oil to pool at all as this will result in greasy, blotchy pancakes and that would be sad!!
Once the pan is coated with oil, I spoon about 1/4 cup of batter into pan...
and cook, undisturbed, for about 2 to 3 minutes or until bubbles appear all over the surface...
Flip over and continue to cook for about 1 minute longer. Please don't press down on the pancake at any time! We want fluffy pancakes! Remove pancake and keep warm while you finish making the rest of the pancakes. Remember to re-oil the pan in the same manner prior to putting new batter in the pan.
To assemble the Yogurt Parfait Pancakes, place a pancake on the serving dish and top with Quaker Real Medleys Yogurt. Continue in this manner 2 more times, so you have 3 pancakes with yogurt in between each one. Top with freshly sliced bananas and enjoy! To store leftover pancakes for later use, cool them completely and store in an airtight container until ready to use.

- Freshly sliced bananas
